I've been trying to find a way to get, from a disk image file, the name of the volume that would mount if it were double-clicked. But I don't want to have to actually mount the disk. So far, everything I've tried has failed and I'm beginning to think this may not be possible. Any ideas?

Quick and dirty idea: did you have a look at the man page for /usr/bin/hdiutil?
For example, if you are interested in images of HFS/HFS+ volumes, you could try to parse the output of:
/usr/bin/hdiutil hfsanalyze /path/to/image
