The only way this really makes sense is if you're also running InDesign Server, which is largely InDesign without a UI.  If your scripts can be made to work with InDesign Server, then there could be some value in running OS X Server.

However, the real question is a cost/hassle calculation.  If it's working and you don't have the time or inclination to mess with it, then it's not worth changing things.  However, if you foresee your load increasing and anticipate needing to increase your server capacity or refine your remote administration abilities, then there can be a case made, as expansion options are different with OS X Server versus OS X Client.

There are no clear cut "You must use Server under these circumstances" rules.  It's mostly about conversion cost, hardware expansion, load balancing and hassle mitigation, and as such, these are completely subjective.
