You have a different (presumably newer) version of Mail than I do. No such item exists in the customizable menu. But as I said originally, I don't use mail, and I'm on Tiger so the update may be in Leopard versions.
In any event, the OP didn't indicate why there was a need for stationary in the first place when there is no difficulty just making the entire message, contents and all, with a scirpt.
