Doesn't look like gibberish to me. It looks like English (with a short French salutation), explaining exactly how to use the system. I've copied it below.
Managing your subscription is all about sending email messages to the right address. Basically, it's a command-line interface over email, where the address you send a message to is the command to execute. The contents of the message don't matter, only the from and to addresses.
So sending an email message to
email@hidden will unsubscribe from the list whatever email address sent the message. Seems straightforward enough.
It also tells you how to reach a human:

their content. Only the ADDRESS you send to is important.
You can start a subscription for an alternate address,
for example "email@hiddenn", just add a hyphen and your

To stop subscription for this address, mail:
<sul-unsubscribe-john=email@hidden>
