Yeah, based on my painful experience with Lion and new "improvements" that you can't turn off in Lion and Mountain Lion, I firmly believe that it should be a crime punishable by death from high orbit if new "features" are introduced without a defaults write setting to turn them off on a per application and system wide basis.
