As suggested by Christian Boyce, I removed "AdobePDFViewer.plugin" and "AdobePDFViewerNPAPI.plugin" from the "Internet Plug-Ins" folder.

Safari now behaves much better.
I can now download PDF files to my desktop with one mouse-click.
(Adobe Reader no longer imposes itself.)
And these files now contain the 'kMDItemWhereFroms' metadata,
and my "Go!Source" application now works properly.
My bank account web site no longer insists that I must have Adobe Reader.
(But, I may encounter other sites that still require this.)
