I believe the original fuller versions were used before the shorter versions were adopted as a standard. Applications that wished to be backwards compatible had to keep using them, and Xcode kept using them as the default for a long time. Now, projects default to the new form, and at some stage support for the older version will presumably go away. But if an app was started as a project using the longer form, at this stage there's not a lot of gain, and the potential for pain, in trying to change it. The result is that some apps use a mixture, with new languages being supported via the new names.
There's no cultural conspiracy here -- just a length changeover.
