I am looking for a way to create 1 (big) PDF file from a folder with subfolders containing doc and DOCX files. First I'd collect them via the Finder (by searching for .doc in This folder), then I'd send them to a service or app.

I've found this example: https://onabai.wordpress.com/2012/07/10/convert-word-files-docdocx-to-pdf-in-osx/

You could build the workflow described above and add one more step. Add a “Combine PDF Pages” Automator action to the bottom of the workflow, and pass the files created by the run AppleScript action to it.
