I see the same behaviour here too on 10.11.6
Academic, of course, if things have changed in 10.12. :)
Not entirely (or not just yet, anyway). I haven’t seen any official adoption rates for macOS yet from Apple, but my anecdotal experience is there’s a lot of traditional ‘early adopters’ that haven’t taken the plunge (myself being one, but my sample size is larger than that!).
I see a lot of problems with Sierra, including the latest beta, and other than having a couple of test installs, I don’t see me going near it till it’s closer to .3 or .4. I also don’t think Xcode 8 is ready for me to get involved with yet either.
On top of that, 10.12 cuts off a number of hardware models, like the MBP models pre-2010, and there’s a lot of those still around and in good working order.
TL; DR - I think a significant percentage of El Capitan systems are going to be around for a long while yet.
