I think its just a matter of Apple's priorities. As fun as games are,
a lot of us are using Macs from programs far more expensive than a
forty dollar video game. I for one wouldn't want to see Apple
dedicating resources away from say Final Cut Pro or the constant
relationship with Adobe. Mac on the most part are finely tuned Tools
of Art and Design, not the focus of boredom beaters like Age of
Empires, as fun as it may be.
A Million Dollar License, or a Billion Dollar License... be apple...
which would you go with?

I am the Gaming Editor for The One Ring Inc, I deal every day with
Electronic Arts and Vivendi Universal in the interests of their Lord
of
the Rings franchise. When a game comes to a platform it is not the
platform that decides it, it's the other platform that decided not to
bid to keep it off of the first. PS2 vs. XBox is a big constant
conflict, yet when Universal is concentrating their efforts for
Middle-earth Online they state that due to the ease of porting a game
to OS X you should expect to see this MMORPG on OS X at the SAME time
it'll be out for the PC.
Don't blame Apple, blame the Developers.
