The only thing that I have planned right now is a demo on compressing a
30 minute video, which is something that a lot of people in this group
are interested in since many of them use their Macs to archive old
video programs. Any suggestions would be very welcome.

I would suggest any other media that involves real-time rendering. Such
as audio recording. Or using complex filters in Photoshop.
Other video demos could include layering of separate video sources in
Final Cut Express or Pro.
And, of course, gaming. You could download a trial demo (or the Army's
game) and show them how fast the frame rate is and how good the texture
rendering is on that machine.
