I do a lot of recording from audio and other streams and I use AudioHiJack Pro ($32).  The Pro version, from RogueAmoeba, allows you to set up an almost unlimited schedule of future recordings and is capable of recording simultaneous streams just so long as they come from different applications such as browsers, iTunes, Quicktime, etc. etc - ion fact any application that has an audio component.  You cannot, for example, simultaneously record from two sources within the same tabbed browser but you can record one stream from Safari and one from Firefox, say).

I don't know how your visual imapirment would affect your ability to use it, but I would guess it would be the same as any other application and you can download a free trial so that's probably the way forward - test before you buy.

I've used it for a long time and, if ever you need technical help, their email responses are quick and helpful.
