1) What's NS stand for - NextStep?

Yeah.

AFAIK the prefix was changed from NX to NS when Sun began working on OpenSTEP,

Well, for sure, original NeXTStep API used NX (not quite consistently), whilst OpenStep uses NS (very consistently). Whether the new prefix was selected immediately when NeXT and Sun began the work or somewhat later I don't know.

so I guess it's "Next/Sun".

It is quite possible. I've always thought that it was just another NeXTStep abbreviation, used instead the original one just so that both worlds (Object- and NSObject-based hierarchies) can be for awhile mixed without too disastrous reasons, but it is quite probable you are right.
