Where you go for the format depends on the particular type of file you're interested in. AIFF is an Apple format; I'd expect it to be documented somewhere on the Apple site. MP3 and JPEG are international standards; I'd go to Google to track them down. The GIF format is covered by a Unisys patent, and is *not* a public standard. (MP3 isn't strictly public, either; there's a license fee attached to using it.) You might also be able to find a book about some of the formats, too; the O'Reilly books are where I'd start checking for that.
