about file types

Hi, where could I get information on a file type? For example mp3, or .aiff files. Say I want to write to those music files. How can I know the format? The same for jpg or gif...what are these formats and where can one find specification on them...For example, I took and mp3 file and opened it in textedit, what I saw was the actual information for that file...I opened an aiff file and was much more organized and, certain standpoint, more understandable. Anyway, what I want is to learn how to put say a sound file or an image file in a certain universal format.
I appreciate all answers.....

p.s. If you haven't tryed it yet, try to change the file in textedit...the way I did it was to copy a bulk amount of letters and paste them continuously in some other part...when I played it...it was music to my ears...try it!!!
