Java is appropriate for the server side of things, no question there.
But this isn't about Obj-C vs Java... this is about not screwing up the
Obj-C side which Apple has had a good amount of success getting adopted
as the language to use on the platform.
Sure, it might be "better" than C++ in terms of adding OO
functionality to the C language, but the reality of the situation is
Apple is shooting itself in the foot by trying to get developers to
learn a language that is not readily spoken.
Java is there.. use it if you want. That's what Apple has provided it
for...
There are tons of Java developers out there.
There are tons of VC++ programmers too... and soon more C# devs than
you can shake a stick at.
