That's what the "graphite" appearance option is for. Anyone who wants
gray buttons can easily have them, for all applications. All, that is,
except for the ones that ignore the users' preferences and force a
particular color scheme.
When dealing with hi-res film colour correction, something that you
might do in a package like Shake or Final Cut Pro, even having graphite
- which is gray, true, but more of a bright and bubbly € gray - might
not be good enough. Though they were tools ported to OS/X you'll find
that both those applications use their own interface and colour scheme.
You'll also find if you try and sell a compositing tool that uses the
aqua colour scheme - graphite or not - you'll have many professionals
coming down on you like a ton of bricks, which is the reason, about a
year and a half ago, Shake made the move from a lighter to darker
scheme.
