I have a custom matrix containing image button cells (i.e. they have icons on them). I'm in the process of making the icons aqua-bluey, but would like to respect those users who prefer the Graphite system appearance.

I'd draw the background programatically, using the methods in NSColor to get the control colors specified in user preferences. Just make sure your images have an alpha channel, so that the background shows through where appropriate.
