how do I force quit classic?

Send a SIGTERM to TruBlueEnvironment. However, this is not a recommended way of shutting down Classic.

And, how do I 'quit' classic?

You need to send a quit Apple event (using AESend() or NSAppleScript) to some Classic-related process. I don't remember its name, though, because I don't have Classic installed on my Mac. I do remember that it's one of the files that Classic Startup puts in the system folder.
