Official company's product documentation can not be suitable for newcomers almost by definition. It has to be complete (and therefore big) as well as up-to-date (and therefore avoid redundancy and force the user to read many topics rather than containing step-to-step explanations of particular tasks). If you spent time on MSDN or UNIX manual pages, you would encounter similar frustration.

While Apple could write a second set of documentation, they would both stunt the market for independent authors and expose themselves to criticism for errors and omissions in these books, which they wouldn't be able to update on monthly bases like they do with reference documents. Instead, there are some excellent 3rd party books such as these:

Cocoa(R) Programming for Mac(R) OS X (2nd Edition) (Paperback)
Programming in Objective-C (Paperback)
Step into Xcode: Mac OS X Development (Paperback)

Once you read these books cover-to-cover you may still have some questions and valid criticisms of Apple's documents. But they probably will not be about NSDictionary or memory management and you may find people more interested and responsive in addressing them.
