Mark,
I would say that I have two comments for you:
1. Use open source applications and sample code that give you the basics of
extending AppKit's controls/views. Of course you'll have to make up the
difference but once you get started, it will likely make more sense.
Some examples:

2. If your application is compelling enough and your UI (well, your whole
app) is a good Mac OS X citizen (eg following UI guidelines, using
consistent paradigms to which users are accustomed), you won't need flashy
goodness to be successful; people will want it and use it.
Look at NetNewsWire as an example. Not a terribly revolutionary interface,
but damn it has a lot of market share. It is a must have for a whole lot of
people.
