For a beginner, Cocoa suffers from the "too much info" problem and its often difficult to find the answers to seemly simple questions. I have had better luck learning from books, and have purchased the following books:

Great Book . . .

A complete disaster. Before you start reading it, burn it . . .

The more or less definitive books are Programming with Quartz by David Gelphman and Bunny Laden, and
Quartz 2D Graphics by Scott Thompson.
Since those two books were published, Core Animation has also emerged for both desktop and mobile.
A reasonable book is
Core Animation: Simplified Animation Techniques for Mac and iPhone Development, Rough Cuts By Marcus Zarra, Matt Long
