Dithering Intents on Epson 5000s

HUH?! URGENT ASSISTANCE NEEDED!!!

Okay, I'm outputting a maroon onto an Epson 5000 using "Color Matching
(Photo)," which I thought meant relative colorimetric, yet it dithers like a
mother every time. Same with "Color Matching (Solid)" which I though meant
absolute colorimetric. But when I use "Photographic" which I though meant
perceptual OR even "Presentation" which I though meant saturation, the red
comes out flat and pretty. What gives?

This doesn't make sense to me at all. I URGENTLY need to understand what's
going on here. Is my understanding of EFI's intents wrong, or am I
misunderstanding intents in general, or what? Why would a specific color
dither? I would suppose a relative colorimetric intent might shift it, but
the whole tint, not some dots in a dithery fashion!!!

I am outputting from Macs from Illustrator 8.01 and the color is defined as
a process one.
