The Helios XT works with XPress 3.X, but not with 4.X as Helios didn't see a point in upgrading given that no customers would pay for it. You can get the Helios XT for Mac off the Helios website.

You can get QXP 4.1 to print RGB as follows:

a. Color manage *all* objects into one and the same RGB space.

b. Make sure RGB is the *only* color model used in the document.

c. Set the 'Print Color' popup to Composite RGB.

Now you will get RGB PostScript from QuarkXPress. This workflow is useful say if you want to create PDF 1.3 for a specific RGB space set in Distiller.

What you're trying to do is a bad idea, though. But I guess you know that.
