Well they don't have such an option. So that's part of the problem.

Maybe you're thinking of the "Composite Simulates Separations" checkbox
option so that the proofer CMYK device will simulate the press/final
destination CMYK device. I've tried this in all versions of QuarkXPress
and it's broken. After a lot of work with Quark on this, they've
essentially confirmed that it's broken.

For RGB to CMYK or six color output, it will convert the files properly
so long as they are TIFFs. It will also properly conver QuarkXPress
colors. It will not convert EPS files (I'm not sure about PICT and JPEG).
It also does not support RGB output profiles.
