That's easy - one compares to an original scene. For the purposes of
testing, usually a target designed for the purpose.
If it only were that simple.....
Colour, as we perceive it, is the result of reflection of light on a
surface. Granted, you can measure the properties of the surface of the
target. But how do you deal with the influence of the lighting
conditions? And more important: how do you deal will the innate 'colour
corrections' of our vision system? After all: you want to 'match' the
captured image to what we 'see', right?
