I remember asking that question not very long ago,
I was similarly confused.
When you choose "Apple ColorSync" it means
use the "Preferred CMM:" choice that you made
in the ColorSync control panel under the "CMMs" tab.
There, you will find choices like "Apple CMM", "Heidelberg CMM",
and "Automatic."
If you choose "Apple CMM", it means ignore the CMM settings
in the ColorSync control panel, and use the Apple CMM.
A better design might be for the pick list to say
"use ColorSync control panel setting"
instead of "Apple ColorSync."
