Denis,
Maybe this question more aptly belong in BlueWorld InDesign List but here's
my take.
Even if you export to PDF as a composite, the Spot color information is not
stripped from the PDF, AFAIK. You say you can only get composite and no
control over the separation? Where are you proofing this? Do you have
PitStop? You should be able to see the Spot colors in PitStop.
About exporting hiRes CMYK and Spot colors, I don't believe there is
anything special required as long as you "Leave all colors unchanged" in the
Advanced options.
The trapping engine is quite advanced -- it's actually a subset of Adobe
$15,000 InRIP trapping. It can do unexpected things once in a while (like
Quark) but otherwise it's OK.
No one has heard of Distiller for OSX yet -- sounds like the "missing link".
Check the Acrobat list at PlanetPDF.com for news on that. They will be the
first to know. They also have a List you can search and subscribe to on
Acrobat.
