David - This is the answer I was looking for. To expand on what CD says
below, since, as far as I know, there are no programs as of yet that look
to the ColorSync CP for anything but the Monitor Profile (which is set in
the Monitor's CP, not the CS CP), the Input, Output, and Proofer settings
are, for the time being, meaningless. The only part of the ColorSync CP
that you need to worry about is the choice of CMM's. You'll want to
select Automatic, which sets ColorSync to defer to the color engine set
in the application pref's of a program like Photoshop.
So selecting Adobe (ACE) means that Photoshop will use its internal
engine (best), Apple ColorSync means that Photoshop will use the
preferences set in the ColorSync Control Panel, Apple CMM means that
Photoshop will use Apple's color engine, and Heidelberg CMM means that
Photoshop will use Heidelberg's color engine.

I believe that what it disables is the "ColorSync Workflow" which means
using
the various settings from the ColorSync control panel as your workflow
settings. This does not stop you from using the monitor profile chosen in
Monitors, and reflected in the ColorSync control panel, it simply allows
you
to use that monitor profile with other devices than the ones listed in
the
ColorSync control panel.
