Correct. So it will preview on-screen per embedded or assumed profile
*and* with respect to the monitor simulation setting. So it's possible it
will preview on-screen will make you think that the image is going to
look OK in print (or be repurposed for the new destination), but if you
have this option unchecked, it will not be converte *at all* to CMYK
destinations INCLUDING proofing using the Composite Simulates Separations
checkbox (which means it's not proofed); but if your composite device is
RGB, it IS color managed for output.

You could always turn color management off for that document prior to
printing as well - that way you get on-screen simulation with no concern
of conversions occuring.

That makes no sense. CMYK images are definitely not in the color space of
the monitor. The way it behaves is exactly how it sounds. It's color
managed for everything EXCEPT when the destination is CMYK. Ignore the
book.
And the RGB sources to RGB destinations is exactly how it sounds too,
which means if unchecked it will NOT preview correctly on a monitor or
RGB printer, but it will get converted when you print to a CMYK
destination.
