RAW is "better" but must usually be converted to a specific format before
you can use the image. In my experience with a Canon D30, the RAW setting
let's you choose/change the camera settings used for the capture, use 8 or
16bit data, plus let's you use a "linear" conversion (gamma 1.0).
Using/altering some of these settings let's you experiment with creating
digicam profiles and see what gives you the best results.

Yep, there's a bunch. The one I currently like is ICC DCam or Capture by
Profile City. It is good general purpose camera profiling software as it
functions as a Photoshop Filter. I find people like this convenience. Gretag
has a digicam profiling module also. If you know a few tricks and the
profiling software let's you do it, you can usually use a scanner profiling
package to create digicam profiles.
