I wouldn't expect it to just assume sRGB. That's a bad idea for quite a
few digital cameras out there. My understanding is that iPhoto 1.1.1 now
supports EXIF data which includes a profile intent tag for either sRGB or
"other" and quite a few cameras that are embedding EXIF data are
specifying sRGB. So perhaps that's the reason you feel that iPhoto is
assuming sRGB.
If Apple is actually supporting profiles in images, they need a mechanism
to reassign the profile to something else, if for no other reason that
manufacturers aren't always including the right tag for the images coming
from their cameras.
