Yes it does say that it sees embedded profiles, but it doesn't actually
use them. It uses the Default Source Profile instead. All of my tests
have been with QuarkXPress 4.11.

I've done the full installation on at three different machines and I've
reproduced these results.
Take a CMYK image and assign it Generic CMYK in Photoshop, and save it
with embedded profile. Create a new document in QuarkXPress, set color
management Default Source Profile for CMYK to something well behaved like
the U.S. Web Coated (SWOP) v2 profile that comes with Photoshop (you'll
have to drag it into the ColorSync folder as the Quark CMS doesn't
resolve profiles in a sub-folder location). Now place the file.
QuarkXPress will see the embedded profile, say that it's using it, but
it's not. To prove it, you can manually select Generic CMYK for the image
in the Profile Information pop-up menu and you will see the on-screen
preview of the image change dramatically. And the reason why is because
it wasn't using the embedded Generic CMYK profile, even though it says it
was.
