Can profiles be used to control an RGB-GS conversion
Yes. A product from iccTools.com (iccToolBox Pro) has a utility called
RichGray. This uses already exsisting RGB or CMYK profiles and converts
all the colour data, in the chosen profile, to its neutral gray equivelant
value.

If the contrast or channel percentages are set correctly in the original
profile, then your RichGray conversion will reflect the quality of the
original profile. If not, there are editing tools in iccToolBox Pro that
can get you where you want to be.
