When setting up the ColorSync control panel, all you do is tell the OS which
profile to use for your "official'" monitor profile.
As far as setting up the monitor profile "itself", you could either use the
Default Apple calibrator or Adobe Gamma Control panel or, and this is my
recommendation, get a colorimeter like the Spyder with either PhotoCal or
OptiCal.
A good monitor profile will show you accurately your images "brought in and
sent out" of your images. Otherwise what are going to trust: your eyes and
uncalibrated/unprofiled monitor?
