This is quite normal. The Adobe 98 rgb space is 6500K thus proofing and
separating into a 5000K printer profile on absolute will give you blue
whites. Don't do this.

Yes if your settings are different then your results may be slightly
different. Your service bureau can export their settings if you like and you
can load them into Photoshop. Usually paintings could be separated with
perceptual unless there are a lot of solid bright colors that may be
compressed..
