First, I assume your Eurostandard profile is an output profile.
If you have untagged CMYK, at least with YOUR output profile, you can see
what your device will do with their set (of undefined) numbers. Your only
real options (other than killing anyone that provides untagged files) is to
assign your house profile and see just how good or ugly those numbers will
appear going to your output device. If it looks good, fine. If it looks bad,
you can try assigning other CMYK profiles and then converting to your output
profile OR assigning your profile and "fixing" the file. None are ideal
situations. But if you're stuck with CMYK (someone else's output numbers)
your stuck.
