The metamerism is just something that you can't entirely avoid with
Ultrachome inks...and I don't think one proofing media would necessarily
be better in that regard. That being said, I know many people who use the
Epson Premium Lustre for proofing and seem to get pretty good results.
Epson also makes a proofing media, but sometimes it can be hard to get.
Best also makes a good proofing stock that I have heard gives good
results.
For the record, I would not advise doing any kind of critical color
evaluation in anything but a controled lighting enviornment...D50 bulbs or
what have you. Thats what the pressmen are going to be viewing your job
under and so should you!
