As John wrote, if your output is properly tagged with profiles
(you did match to your output device), ColorSync does see that
there is nothing to match. This null-transform does not hurt
anybody.
Anything more is simply is not doable unless (non postscript)
printer devices stop behaving as RGB-devices.
To John Zimmerer and Robert Krawitz:
I m very much impressed what is possible with Gimp-Print.
I like it very much that my Epson is CMYK capable now,
including things like gamma control and density control,
things that I missed in the Epson driver and made life
(and profiling) hard.
Now I can produce the CMYK I want, at least when I print
from Preview. But I remember there have been adjustments
for Key too, but they are gone in current Gimp-Print.
But I ve met an old friend again: Mr. ScumDot.

This is very much like the behavior covered in the topic
on _Panther, sRGB, web browsers_.
Seems to me that the settings I do in the ColorSync utility are
legacy support for >"pro" apps

Hmm, ColorSync utility says that my Gimp-Print driver profiles
can t be found. Ok, a HP deskjet is not an Epson, so its difficult
to decide for the installer, but shouldnt there be a default?
Hey, what about the ColorSync utility settings? This turns ColorSync
matching off, and we can profile our printer!
