That's what guides the conversion from Lab to Device. It can be done many
ways but one way or another HAS to be chosen, either by you or some
defaults.

It does not affect gamut. That is defined by measuring the characterization
chart. The conversion from Lab to Device merely (excuse the euphemism...)
takes advantage of the already calculated gamut.

No, that's not how 'modern' CMS pakages do this. At one time, ColorBlind was
doing just that. They forced you to decide on a black generation scheme and
had you profile that. But not anymore, I understand ColorBlind v5 (?), Fuji,
Monaco, PrintOpen, GretagMacbeth (even ColorFlow!) all allow you full black
generation freedom at the time of generating a CMYK output profile.
