We have a simple test image that is part of our profiling kit. It is just a ramp in K in a CMYK image. You print it (without any color management) and see if it printed with black ink only (a CMYK device) or did something nasty to it and contaminated the ramp with CMY inks (better profiled as RGB)
Another test is to load a CMYK image and then try to print it with no color management from Photoshop. If "same as source" is available as an option in the print profile popup then it is a CMYK-controlled printer (as far as Photoshop is concerned).
A problem with relying on Photoshop is that I think Photoshop says that any Postscript printer is CMYK. I have a Tek840 that (like most crayon printers) has only partial black control. I have found that it profiles better as an RGB device. Photoshop won't let me send an RGB target though! Also profiling some office printers as an RGB device allows you to specify some colors by RGB values in CMYK-dumb apps like Office, FileMaker, etc.

it's a freakin mystery
print some stuff and check it out
try both ways if you're in doubt
