No entirely true Jim. You must be referring to the KPG Matchprint RIP version of the BestColor RIP. With that RIP you do indeed edit the CMYK-to-PCS ("proofing") side of EITHER the source or destination. If you edit the source/reference profile, you edit it in the direction you want. If you edit the destination/paper profile you must edit it in the OPPOSITE direction as you state. This has to do with the Kodak/Imation CMM under the hood. It is able to "re-separate" the destination profile using it's own parameters thus overriding the original separation table although this "feature" can be disabled.

A standard non-OEM BestColor RIP functions like you would expect; edit the PCS-to-CMYK side of the destination profile in the direction you want and it will behave correctly.

The question then becomes "What as KPG thinking?".

My thinking of color management tends to be straight forward. I start with a
source profile CMYK/RGB to PCS, and end with My destination Profile PSC to
CMYK/RGB. Most color management system process images in this manner.
However there are a few renegade approaches that like to do things in a
counter intuitive way. Such as CMYK to PCS Source and then CMYK to PCS
Destination. My favorite app for this is Best Color. You can adjust the PCS
to CMYK side of the destination profile all day long and nothing happens.
When you adjust the CMYK to PCS side of the destination profile your output
changes, however in the opposite direction that you would think it should
change. This leaves you with the option of adjusting the source profile
which renders it useless for any other purpose, or adjust the destination
profile adding color to take away color in the final out put. What were they
