Just a shot in the dark but do you see any OTHER CMYK profiles in
Illustrator's print dialog or only RGB Profiles?

I can see both CMYK and RGB profiles in Illustrator CS's print dialog
color management pane, but only if they are in
/Library/ColorSync/Profiles or ~/Library/ColorSync/Profiles.
If the color profiles are in /Network/Library/ColorSync/Profiles they
appear in the Color Settings dialog in Illustrator CS and Photoshop CS,
as well as the print preview dialog in Photoshop CS. The profiles just
don't appear in Illustrator CS's print dialog color management pane.
