I run my Eizo CG21 at 120cd/m2, but I believe this would depend on the ambient light in your work area as to what your luminence should be.

<2. In identical PS working spaces I can differentiate shadow separation between 99%K and 100%K on my Lacie. With the Eizo, it's 97% and 100%K. With a RIP and quadtone inks I can print 98% on 100%K so if I can print it I need to see it on the monitor. Is a difference this slight something that should/can be compensated for by setting a custom grayscale gamma working space? Or do I just forget about the slight loss in shadow detail (CRT vs LCD technology).>
I have a custom gray working space and I can see the difference between 99 and 100% fairly clearly, but generally can't with any other working space... haven't noticed any banding issues 
 
<3. On OS X are others finding that Color Navigator takes about 40 seconds to launch?>
