The files had still the Eurostandard profile embedded though! Which made me guess that they open the files with "discard profiles" turned on. Unfortunately, this is almost the norm here with most printers.
Other issues aside I would have to agree with the printer ignoring embedded profiles and going with their output situation. If you have built CMYK then the color management is done. It is rare that you want CMYK files re-separated to another flavor of CMYK when headed to press. Not unheard-of but rare and filled with it's own issues.
If you don't like the results then perhaps you didn't send them the right CMYK. That still doesn't mean it's necessarily your fault but you and the printer need to talk more to determine which standard printing condition they are closest to. Then you can create the best CMYK for the job and avoid the strange surprises.
