If Proofing is of concern to you then there is another option that you have
missed in your Googling.
I would recommend for you to look at the Extrachrome ink set for the Epson
4800.
The Extrachrome ink-set will give you larger colorgamut than any other
ink-set on the market and will also deliver by far better Pantone matching.
You can actually convert the Epson 4800 from a traditional CMYK printer to
an extremely capable HI FI proofing device. This also goes for the 7800 and
the 9800 Epson printers.
Matching or exceeding color capabilities of the most expensive analogue
proofing solutions on the market.
To achieve this you would also need to drive the Epson with a software that
is capable of handling these inks.

As of the change from the 5000 to the 4800, do not think twice.
You have 3 generations jump in printer heads which are the engine of the ink
jet printer, controlling both the quality and the speed.
You would probably not think often about upgrading a computer of the same
generation or buying a new one.
