 I'm using "iPhoto 5, version 6.0d1", running on Panther 10.3.7, with one jpeg without a profile and another with Adobe RGB profile embedded.  I've imported them with this version of iPhoto, haven't edited them.  If I set my display profile to BGR, quit iPhoto and relaunch it, the images show inverted colors after having been matched to the display.  Maybe you're using iPhoto 4, that doesn't seem to pay attention to the display profile.  Right now I'm just talking about the display profile being used or not.  The editing leaving the image in Generic RGB is a different problem.
