Gray balanced is easy. Just look at the Lab readout when pointing the cursor
at patches where R=G=B. You'll see, if your Conversion Options are set to
RelCol or Perceptual in Color Settings, that the Lab equivalent are always
a* = 0 and b* = 0. That's one sure way to know.
As for being perceptually uniform, that's less obvious to track down with
numbers. I would venture to say it is related to how R=G=B maps out to L*.
If you consider the L* scale to be perceptually uniform, and there is plenty
of evidence to that effect, then you could say that the way the AdobeRGB RGB
scale progresses, from 0 to 255, is "unform". Would you buy that argument?
