I don't even think this is possible, not that you'd want to do it.
You CAN convert to the std CMYK workingspace profile, also rather heavy-handed...

if a profile is going to be tossed in the RIP then I would leave it embedded. Then if / when you open the file later you will know what space it is in... which I think might be related to the problem you mention later....

ah! confusion is a sign of getting it..

OK. It sounds like the CMYK that's in the original file is too yellow for your press and that shows up on your soft proof and hard proof. This is good - as it is a sign that your proofing system is working...
If you open that CMYK and throw away the profile and treat it - unconverted - as press CMYK then you will see the yellow problem.
If you open the file while using the embedded profile, CONVERT TO your normal CMYK profile THEN it should look OK on your soft and hard proofs...
does that make sense?
