Really, density has nothing to do (or is not a good measure of) color gamut. There's Soooo Muchhhhhhh to this question that a proper answer would require a few pages.
The short version is to forget density/densitometer and use a spectrophotometer (I'm going to assume you're talking about an inkjet device and not a press). There's differing approaches/opinions on this, but a basic approach to finding the maximum "gamut" of an ink would be to measure the ink in Lab or, better yet (easier) in Lch. Simply print a "raw" unlimited step wedge and measure to find the max/peak chroma (the "c" in Lch) for each ink channel. With many inkjets, you'll see that the chroma will increase to a point and then start falling off as you approach 100%. At this peak point (or perhaps slightly less) is the point where you want to set your ink limit for each channel.
